MONDAY AFTERNOON - 3:35 p.m.

Alyson demanded that I update the front page but I have nothing of interest to say so instead I will provide you with the recipe of the cake I made today. I put the all the cinnamon in with the flour mixture (in error) so mine turned out slightly different but still yummy on this cold, snowy day! The cake is brilliant with a cup of vanilla coffee! ENJOY!

Cinnamon-Apple Cake

The cream cheese in the batter gives this cake lots of moisture. Because it's so tender, use a serrated knife for cutting.

1 3/4 cups sugar, divided

6 oz cream cheese

1/2 cup butter

1 teaspoon of Vanilla

2 large eggs

1 1/2 cups of flour

1 1/2 teaspoons baking powder

1/4 teaspoon of salt

2 teaspoons of ground cinnamon

2 large apples

cooking spray

1. Preheat oven to 350 degrees

2. Beat 1 1/2 cups sugar, cream cheese, butter, and vanilla at medium speed of a mixer until well-blended. Add eggs, one at a time, beating well after each addition; set aside.

3. Lightly spoon flour into dry measuring cups; level with a knife. Combine flour, baking powder, and salt. Add flour mixture to creamed mixture and beat on low until blended. Combine 1/4 cup of sugar and cinnamon. Combine 2 tablespoons of the cinnamon mixture and apples in a bowl then stir apple mixture into the batter. Pour into 8 inch springform pan that's been coated with cooking spary. Sprinkle the remaining cinn/sugar combo on top.

4. Bake @ 350 for 1 hour and 15 minutes or until cake pulls away from the sides of pan. Cool completely on a wire rack and cut with a serrated knife.
